Spaghetti with avocado cream and salted peanuts
Ingredients:
– 250 g spaghetti
– 3 cloves of garlic (baked in its peel)
– 1 avocado
– Juice of 1,5 limes
– 1 big bunch of coriander
– 1,5 shallot onion
– 4 tbsp. heavy cream
– 1 tbsp. olive oil
– Green chili (to your taste)
– Salt, pepper
To the top:
– Salted, roasted peanuts
– Manchego cheese (grated)
– Coriander (chopped)
Preparation:
Chop everything (except for the spaghetti) in the chopping machine.
Cook the spaghetti al dente in salted water. Then mix the pasta with the pesto. We can also add a little cooking water into it.
Sprinkle the cheese, peanuts and coriander on the top of it.
